Ingredients

  • 2 cups fresh Moringa leaves, washed and stems removed
  • 1 cup fresh spinach leaves
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup extra virgin olive oil
  • 1/3 cup pine nuts or walnuts
  • 3 garlic cloves minced
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Pasta of your choice
  • Optional: Jalapeño for a slight kick

Moringa pesto offers a fresh twist on the classic Italian sauce by incorporating the nutritious powerhouse that is moringa leaves. This recipe combines the unique flavor of moringa with traditional pesto ingredients, creating a vibrant, delicious pasta dish.

Instructions:

  1. Prepare the Pesto:

    • In a food processor or blender, combine moringa leaves, basil, pine nuts, and minced garlic. Pulse until the mixture is coarsely chopped.

    • With the processor running, slowly add the olive oil in a steady stream. Stop the processor and scrape down the sides.

    • Add the Parmesan cheese, lemon juice, salt, and pepper. Pulse until combined and smooth. If the mixture is too thick, you can add more olive oil to reach your desired consistency.

  2. Cook the Pasta:

    • Bring a large pot of salted water to a boil.

    • Add the pasta and cook until al dente.

    • Reserve 1 cup of pasta water and then drain the pasta.

  3. Combine and Serve:

    • Return the drained pasta to the pot. Add the moringa pesto and toss to combine, adding reserved pasta water a little at a time to achieve a creamy consistency.

    • Taste and adjust seasoning if necessary.

    • Serve the pasta in bowls, garnished with a sprinkle of Parmesan cheese.
