  • 1 lemon, juiced
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1 garlic clove, minced
  • 1/4 cup grated Parmesan cheese (optional)

Instructions:

  1. Preheat Oven: Preheat your oven to 400°F (200°C).

  2. Prepare Brussels Sprouts: Toss the Brussels sprouts with a tablespoon of olive oil, salt, and pepper, and spread them out on a baking sheet.

  3. Roast Brussels Sprouts: Roast the Brussels sprouts in the preheated oven for about 20-25 minutes or until golden brown and crispy on the edges, stirring halfway through.

  4. Prepare Salad: In a large salad bowl, combine the roasted Brussels sprouts, chopped kale, chopped romaine lettuce, and sliced celery.
